I did a lot of research before deciding on this grill pan. It seems to work best if you brush olive oil (or other oil) on all sides of whatever you’re cooking. I convection bake (like air fry) at 375°. Flip once. Great for BBQ chicken tenders. Cook till basically done, brush with BBQ sauce, flip, more sauce, cook till BBQ-perfect sear. PUSH with spatula to remove… don’t try to lift… at least not until cast iron is seasoned with use. To clean, I let it cool, then top with hot soapy paper towel. Or just soak in hot water and Dawn dish soap. Then scrape with scrubby, wipe thoroughly with dry paper towel. After that, I give it one last quick hand wash and dry. Amazingly easy, especially considering it is a “grill.” The deep groves make it cook like an outdoor grill. And the wide groove width makes it super easy to clean. This little grill pan is my new go-to.

Like probably a lot of people here, I found this because America’s Test Kitchen recommended it. I was thinking about getting a panini press but I didn’t want another appliance I wouldn’t use regularly cluttering up my kitchen. I liked the idea of something that just used the range and didn’t take up a lot of storage space. And I figured I could also do a bit of grilling indoors with it, so it has multiple uses.
Now that I have it and have used it a bit, here is what I like about it: It’s thick and heavy, thicker than a pan with just some ridges in it. I put the high output gas burner under it and it gets HOT. Seriously hot. Hot enough to grill with. The thickness helps avoid hot spots and so it cooks pretty evenly. It puts nice grill marks in meat and the ridges are high enough that the fat drains off into the channels. You can do 4 burgers on it at a time. So basically this and your range means you now have a small indoor grill.
When it comes time to clean, well first you are going to wait, and wait, and wait some more for it to cool down. Remember – this is a thick piece of iron it needs all of that thermal mass to cook evenly, but the downside is it takes a while to cool after you use it. Then, once you get down to scrubbing it clean, it isn’t terrible, the pre-seasoning helps a lot, but you aren’t going to wipe it off and be done in 10 seconds either. You get to clean every channel and every ridge, but the design is such that the channels are wide and the ridges are smooth and flat, so it isn’t fussy work to get in there and get everything off. Then you need to dry it off before you put it away just like any other cast iron pan. It is a bit longer than cleaning a smooth pan but not so much that you will be deeply annoyed by it, either.
Is this going to replace your grill outside? Probably not. But for a small group of people, a single steak, a panini, or some burgers or bratwurst, this is going to perform very well and you are going to be very happy with it. I am already thinking about how it is going to be really nice to have this when the weather is terrible and I don’t want to grill outside. It is also going to easily outlast you if you take reasonable care of it. That’s not something you can say very often these days.
For what this costs, get it. You won’t regret it.

I use it on my grill and it works well. Strong, heavy and durable.
